Ingredients
For the Stuffed Patties:
  • 1½ lb ground pork
  • 1 large egg
  • 50 g breadcrumbs
  • Coarse sea salt and whole black peppercorns, freshly ground using the TempPro Salt & Pepper 2-pc Grinder Set
  • 6 thick red onion rings
  • 6 cheese slices
  • 6 pickle slices
  • 6 bacon slices
For the Potato & Onion Base:
  • 2 lb potatoes, peeled and shredded
  • 1 white onion, thinly sliced
For the Mozzarella Topping:
  • 1 tomato, finely diced
  • 3 hard-boiled eggs, finely chopped
  • mozzarella cheese, shredded
  • 1 tbsp plain yogurt

Prepare the Ingredients: Peel and shred the potatoes, then squeeze them firmly with a clean kitchen towel to remove as much excess moisture as possible; thinly slice the white onion, prepare 6 thick red onion rings, slice the cheese and pickles into portions for stuffing, finely dice the tomato, and chop the 3 hard-boiled eggs.

Season the Ground Pork: Place the ground pork in a large bowl, then add the breadcrumbs (weighed using the  TempPro IC255 Digital Pocket Scale) and 1 raw egg. Use the TempPro APG710-2 One-Handed Auto Salt & Pepper 2-pc Grinder Set to evenly season the pork with salt and black pepper. Mix everything thoroughly by hand until the egg and breadcrumbs are evenly incorporated and the pork mixture becomes slightly sticky and holds together well.

Fill and Shape the Patties: Spread the pork mixture into an even layer and arrange the fillings in the center. First, add a red onion ring, followed by cheese, a pickle slice, and a slice of bacon. Fold the pork mixture over the fillings from the middle and press firmly to completely seal everything inside. Divide the filled pork mixture into 6 portions, then use your hands to shape and compact each portion into a round stuffed patty, making sure there are no large openings where the cheese could easily leak out during baking.

Build the Potato & Onion Base: Spread the squeezed shredded potatoes evenly across the bottom of a baking dish, then scatter the sliced white onion over the potatoes. Arrange the 6 stuffed patties evenly on top, leaving a little space between each one so the heat can circulate around them during baking.

Make the Mozzarella Topping: Add the finely diced tomato, shredded mozzarella, chopped hard-boiled eggs, and yogurt to a bowl. Stir until everything is evenly combined and the mixture holds together, then divide it into 6 portions and spoon one generous mound directly onto the top of each stuffed patty. Use the back of a spoon to gently spread and smooth the cheese mixture evenly over the surface of the pork.

Bake: Place the baking dish in the preheated 350°F (180°C) oven and bake for approximately 40 minutes, until the patties are browned, the mozzarella topping is melted and lightly golden, and the potatoes and onions underneath have softened and absorbed the flavorful juices released from the pork. Because the exact cooking time can vary with the size of the patties and your oven, use temperature—not appearance alone—to determine whether the pork is fully cooked.

Check Temperature with the TP620: Unfold the probe of the TempPro TP620 Instant-Read Meat Thermometer. Insert the probe into the thickest part of one of the largest patty, aiming for the center of the ground pork rather than measuring only the melted cheese filling. Check several patties if they vary in size. The ground pork should reach at least 160°F (71°C) before serving. If the temperature is still below the target, continue baking for a few more minutes more before checking again with the TP620.

Plate and Serve: Once the pork has reached the proper internal temperature, let the dish rest briefly before serving. Spoon some of the roasted shredded potato and onion onto each plate, place the stuffed patties on top.
