- 1 lb salmon fillet
- 1 tsp salt
- 1 tsp black pepper
- 1 oz mozzarella cheese
- 1 oz yellow cheese
- A handful of parsley (finely chopped)

Generously sprinkle both sides of the salmon fillet with sea salt and freshly ground black pepper. Marinate for 20 minutes.

To accurately monitor the internal temperature of your ingredients as they cook, insert a TempPro TP970 TempSpike Plus and set the target temperature to 125°F.

Heat a skillet over high heat until it begins to lightly smoke. Add a small amount of oil and swirl the skillet to coat evenly.

Place the salmon fillet in the skillet. Maintain high heat and sear for 2-3 minutes.

Transfer the salmon fillet to a baking dish. Top with mozzarella cheese, yellow cheese, and parsley.

Preheat oven to 350°F. Place the salmon fillet in the oven and bake until the internal temperature reaches 125°F. Remove from oven.
