  • 2 lbs sirloin steak
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp butter
  • 3 garlic cloves
  • 1-2 sprigs of rosemary and thyme, fresh

Liberally sprinkle both sides of the steak with coarse sea salt and freshly ground black pepper.

Heat a cast iron skillet over high heat until it begins to smoke slightly. Add a small amount of high-smoke-point oil and swirl to coat evenly.

Place the steak in the skillet. Maintain high heat and sear each side for 2-3 minutes until a deep brown crust forms.

Using tongs, briefly sear the sides of the steak to seal in juices. Reduce heat to medium-low. Add butter, rosemary/thyme, and garlic.

Using a spoon, continuously baste the steak with the melted butter for 2–3 minutes to enhance flavor and promote internal cooking. The steak has finished cooking once the ThermoPro TP622 Lightning One-Second Instant-Read Meat Thermometer shows an internal temperature of 130-135°F (medium rare).

Transfer steak to a warm plate. Loosely wrap in foil and let rest for 5–8 minutes before serving.
