Recipe Preparation
- 1 lb T-bone steak
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp butter
- 3 garlic cloves
- 1-2 sprigs rosemary and thyme, fresh
Recipe Instructions
1
Generously sprinkle both sides of the steak with coarse sea salt and freshly ground black pepper.
2
Heat a cast iron skillet over high heat until it begins to smoke slightly. Add a small amount of high-smoke-point oil to coat the pan evenly.
3
Place the steak in the pan. Maintain high heat and sear each side for 2-3 minutes until a deep brown crust forms. Using tongs, briefly sear the sides of the steak to seal in the juices.
4
Reduce heat to medium-low. Add butter, rosemary, thyme, and garlic.
5
Using a spoon, continuously baste the steak with the melted butter for 2-3 minutes to enhance flavor and promote internal cooking.
6
Use a TempPro Lightning to check the internal temperature of the steak. Remove from heat once it reaches 130°F.
7
Place the steak on a warm plate, loosely wrap it in foil, and let it rest for 5-8 minutes.
