- 8 chicken thighs

- ½ Tbsp. butter
- 1/2 onion, chopped
- 6 cloves chopped garlic
- 1.25 cups chicken broth
- 1 Tbsp. lemon juice
- 1 tsp. flour
- ⅓ cup stone ground mustard
- ¼ cup chopped tarragon leaves

Preheat your oven to 375 degrees Fahrenheit.

Heat the butter in a pan over medium-high heat. Once hot, add the chicken thighs skin-side down. Season with salt and pepper. Let cook undisturbed for 8–10 minutes to brown the skin.

Once the skin is crisp and releases easily, flip the chicken. Remove from the pan and drain about half the fat. Lower heat to medium.

Add chopped onion and sauté for 3–5 minutes until soft. Stir in garlic until fragrant. Add mustard and stir, followed by broth and lemon juice. Simmer, then whisk in flour and half the tarragon.

When the liquid is bubbling, return the chicken to the pan skin-side up. Top with the remaining tarragon.
