- 2 chicken breasts
- 1 bottle yellow mustard
- 1 onion, half sliced for stuffing, half minced for sauce
- 1 tomato, sliced
- 1 bunch fresh spinach leaves
- 1 pack prosciutto or ham slices
- 1 pack cheese, shredded
- baby potatoes, halved
- Butter & minced garlic
- White wine, flour, and heavy cream (for the sauce)
- Coarse sea salt and black peppercorns, freshly ground
- Lemon slices, for garnish

Season the Chicken: Lay the chicken breasts flat on a cutting board. Squeeze yellow mustard over the chicken and use your hands to rub it in evenly.

Layer and Wrap: Layer the sliced onions, tomato slices, and spinach leaves on top of each chicken breast. Carefully wrap the entire stuffed chicken breast with slices of prosciutto. Tie them securely with kitchen string to hold the shape.

Insert Probes and Wrap in Foil: Insert the probes of the TempPro TP972 Twin TempSpike Plus 600-ft Wireless Dual-Probe Meat Thermometer directly into the thickest part of the chicken roll. Sprinkle a generous amount of shredded cheese over the top, then wrap the chicken rolls tightly in aluminum foil (leaving the probe end exposed).

Bake: Place the foil-wrapped chicken rolls in a baking dish surrounded by halved baby potatoes. Drizzle olive oil over the potatoes. Open the TempPro App, select the "Poultry" profile, and bake in the oven until the alarm sounds.

Make the Creamy Sauce: While the chicken is baking, melt the first portion of butter in a frying pan and saute the minced onion and garlic until fragrant. Add the second portion of butter to the pan, then pour in a splash of white wine. Stir in the heavy cream and a little flour. Season with freshly ground salt and black pepper using your TempPro Salt & Pepper Grinder Set. Bring the mixture to a boil, then reduce to a low simmer until the sauce thickens to a glossy consistency.

Slice and Serve: Once the TempPro alarm sounds, remove the chicken from the oven. Unwrap the foil, take out the probes, and remove the string. Cut the chicken rolls into thick rounds. Plate them with the roasted potatoes and lemon slices, then generously pour the creamy sauce over the chicken.
