- 2 boneless chicken breasts
- 1 tsp salt
- ½ tsp black pepper
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs

- 2 cups cooked sushi rice
- 2 tbsp rice vinegar
- 1 tbsp sugar
- ½ tsp salt
- 3–4 sheets nori (seaweed)
- 1 avocado, sliced
- 1 cucumber, julienned
- Japanese mayo (optional)
- Tonkatsu sauce (optional)
Recipe Instructions

Prepare the Sushi Rice: Cook rice according to package instructions. While still warm, mix in rice vinegar, sugar, and salt. Let the rice cool to room temperature.

Prepare the Chicken: Slice chicken breasts horizontally to create thinner cutlets. Season both sides with salt and black pepper.

Prepare Breading Stations: Set up three bowls containing flour, beaten eggs, and panko breadcrumbs. In succession, coat chicken cutlets in flour, egg, and breadcrumbs. Press breadcrumbs firmly onto chicken.

Fry the Chicken: Heat oil in a skillet to 350°F (175°C). Carefully place chicken cutlets into hot oil. Cook about 3–4 minutes per side until golden brown.

Assemble the Sushi Rolls: Arrange the julienned cucumber on a bamboo mat. Spread sushi rice evenly over the cucumber. Add the sliced chicken, avocado, cucumber, and mayo or sauce (optional). Roll tightly using the sushi mat.

Slice and Serve: Slice each roll into 6–8 pieces. Serve with soy sauce, wasabi, and pickled ginger.
