  • 2 boneless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs

For Sushi Rice
  • 2 cups cooked sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
For Sushi Rolls
  • 3–4 sheets nori (seaweed)
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • Japanese mayo (optional)
  • Tonkatsu sauce (optional)
Recipe Instructions

Prepare the Sushi Rice: Cook rice according to package instructions. While still warm, mix in rice vinegar, sugar, and salt. Let the rice cool to room temperature.

Prepare the Chicken: Slice chicken breasts horizontally to create thinner cutlets. Season both sides with salt and black pepper.

Prepare Breading Stations: Set up three bowls containing flour, beaten eggs, and panko breadcrumbs. In succession, coat chicken cutlets in flour, egg, and breadcrumbs. Press breadcrumbs firmly onto chicken.

Fry the Chicken: Heat oil in a skillet to 350°F (175°C). Carefully place chicken cutlets into hot oil. Cook about 3–4 minutes per side until golden brown.

Check Temperature: Insert the TempPro TP509 Digital Instant-Read Oil Thermometer into the thickest part of the chicken. Ensure the internal temperature reaches 165°F (74°C). Remove chicken and let rest for 5 minutes, then slice into strips. Using the TP509 ensures the chicken stays juicy inside while crispy outside.

Assemble the Sushi Rolls: Arrange the julienned cucumber on a bamboo mat. Spread sushi rice evenly over the cucumber. Add the sliced chicken, avocado, cucumber, and mayo or sauce (optional). Roll tightly using the sushi mat.

Slice and Serve: Slice each roll into 6–8 pieces. Serve with soy sauce, wasabi, and pickled ginger.
