  • 1 large ribeye, sirloin, or strip steak (about 1 lb, 1–1.5 inches thick)
  • 1 tbsp olive oil or butter
  • 1 tsp kosher salt
  • ½ tsp black pepper

For the Eggs
  • 2–4 large eggs
  • 1 tbsp butter
  • Salt and pepper to taste

  • 130°F for medium-rare
