- 1 rib eye steak
- 2 potatoes
- 1 cup duck fat
- 3 sprigs of rosemary
- 5 cloves of garlic
- Lemon zest (to taste)
- Salt and black pepper (to taste)

Roast the Potatoes: Peel and cube the potatoes. Bring a pot of salted water to a boil, then add the potatoes and cook until tender. Drain and transfer the potatoes to a baking tray with duck fat. Preheat the oven to 392°F (200°C) and roast the potatoes, turning over halfway through, until they turn golden brown and crispy.

Season the Potatoes: Finely chop the rosemary, garlic, and lemon zest. Add them to a bowl, season with salt and black pepper, then mix with 2 tablespoons of olive oil. Toss the roasted potatoes in this mixture until evenly coated.

Cook the Steak: Season the rib eye steak with salt and black pepper. Use TempPro Twin TempSpike Dual-Probe Meat Thermometer to make sure the steak reaches the ideal temperature. Insert the probe and set the target temp to 120°F (49°C). Sear the steak in a preheated skillet until the internal temperature reaches the target. Remove and let it rest for about 5 minutes before serving.
