- 1½ lb pork loin or pork shoulder, cubed
- 2 tbsp vegetable oil
- 1 tbsp butter
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 2 lbs russet or Yukon gold potatoes, cubed
- 2 tbsp oil
- Salt and pepper, to taste
- 4 garlic cloves, minced
- 2 onions, sliced
- Fresh parsley, for garnish

Sear the Meat: Heat oil in a skillet over medium-high heat. Add pork in a single layer and sear until browned on all sides.

Check the Temp: Insert the TempSpike Pro into the thickest piece and monitor temperature as it cooks. Remove the meat when it reaches about 140°F to prevent overcooking.

Cook the Potatoes: In the same skillet, add butter and potatoes. Cook 15–20 minutes until golden and fork-tender. Add onions and garlic, cooking until softened and fragrant.

Finish Cooking: Return the meat to the skillet and cook until the TempSpike Pro reaches an internal temperature of 145°F.
