Recipe Instructions
1
Sear the Vegetables: Heat a skillet over medium-low heat with a light drizzle of olive oil. Sear the bell peppers until lightly charred on both sides, then set aside. In the same skillet, briefly sear the asparagus until bright green and tender-crisp. Transfer to paper towels to drain.
2
Assemble the Bake: Line a baking dish with bacon slices, layering them across the dish so the ends overhang along the edges. Place a bed of seared asparagus at the center bottom , then lay the salmon fillet directly on top. Season the salmon evenly with garlic powder and fresh lemon zest. Add freshly ground pepper using the TempPro APG710 Electric Salt & Pepper Grinder Set. Arrange the charred bell peppers and remaining asparagus around the salmon, then top evenly with shredded cheese . Fold the overhanging bacon strips up and over the top, wrapping everything tightly into a smooth, rectangular package.
3
Roast to Perfection: Bake in a preheated oven until the bacon turns golden-crisp and the salmon reaches desired internal temperature.
4
Prepare the Herb Vinaigrette: In a small bowl, whisk together lemon juice, Dijon mustard, and honey. Slowly drizzle in olive oil while whisking until emulsified. Stir in diced pickles, chopped dill, parsley, fresh lemon zest, and black pepper.
5
Check Food Doneness: Remove the baking dish from the oven. Insert the probe of your TempPro TempSwift ELITE TP620 Instant-Read Meat Thermometer into the center of the salmon. Once it registers internal temperature cooked through, around 125°F-135°F for medium-rare/medium, or 145°F according to USDA guidelines, it’s ready to serve.
6
Serve and Enjoy: Slice into portions and serve immediately alongside the house-made herb vinaigrette.
