- 3 lbs pork loin
- 3 chicken breasts
- 2 bottles beer
- 1 bag ice cubes
- 1 medium purple sweet potato, sliced into ¼" round disks
- 1 medium red sweet potato, sliced into ¼" round disks
- 2 lbs Parmesan cheese, shredded
- 2 tbsp extra virgin olive oil
- 1 tsp paprika

- 1 stick (½ cup) unsalted butter, softened
- 1–2 cloves garlic, minced
- 1 cup (approx. ½ lb) cooked ham, diced and cut into ½" cubes
- 1 cup (approx. ½ lb) tomatoes, diced with seeds removed to prevent sogginess
- 1 cup (approx. ½ lb) potatoes, diced and cut into ½" cubes)
- 1 cup (approx. ½ lb) cheddar or gouda cheese, diced
- 1 pack (approx. 8 oz) fresh mini mozzarella cheese balls
- Olive oil
- Coarse sea salt and black pepper corns, freshly ground

Then, rush some inside the cavities of the pork loin and chicken breasts, then fill the pockets generously with the stuffing (diced ham, tomatoes, par-boiled potato cubes, cheese, and mini mozzarella balls). Fold the meat over the filling, secure the seams with toothpicks, and tie with kitchen string. Slather the remaining garlic butter over the outside of the pork and chicken for a rich, golden crust.
