Step 4: Leave It Alone Until It Releases

Once the chicken hits the pan or grate, resist the urge to move it. Skin needs time to form a crust and bond with the surface, and poking or flipping it too early tears that crust apart before it can set.

Left alone, the chicken naturally releases from the surface when it’s ready to turn. If it’s sticking, it isn’t ready yet. Wait for that clean release and you keep the crisp layer intact.

Step 5: Cook to the Right Internal Temperature
