Ingredients

  • 1 tsp minced garlic
  • 1 tsp chili powder
  • 1 tbsp finely chopped onion
  • 1 tbsp BBQ seasoning
  • 1 tsp fresh lemon juice

Prepare and Season the Steaks: Preheat the charcoal grill. Pat the steaks dry with paper towels, then wrap kitchen twine around the outside edge of each steak and tie securely to help them maintain an even shape while grilling. Use the TempPro APG710 Electric Salt & Pepper Grinder Set to grind fresh black pepper evenly over both sides of the steaks, then drizzle with olive oil and rub it over the entire surface. Sprinkle 1 tablespoon of BBQ seasoning over the steaks and rub until evenly coated.

Insert the TP828BW Probes: Insert each probe from the TempPro TP828BW Wireless Meat Thermometer horizontally into two steaks, aiming for the center of the meat and avoiding large pockets of fat or areas too close to the surface. Set the desired steak temperature on the TP828BW, then place the steaks on the preheated charcoal grill, making sure the probe cable stays safely away from direct flames.

Grill the Steaks: Grill the steaks over the hot charcoal, turning as needed so both sides brown evenly while continuously monitoring the internal temperature with the TP828BW. Continue grilling until the steaks reach your selected target temperature and the thermometer alarm sounds, then remove them from the grill and set aside to rest. For food safety, whole beef steaks should reach at least 145°F (63°C) followed by a minimum 3-minute rest.

Make the Garlic BBQ Butter: While the steaks are grilling, place the softened butter in a small mixing bowl and add the minced garlic, chili flakes, finely chopped onion, 1 tablespoon of BBQ seasoning, and fresh lemon juice. Stir everything together thoroughly until the seasonings are evenly distributed throughout the butter, then set the mixture aside for cooking the shrimp. Note: This step does not appear in the video, but it is included in the recipe. It is best not to skip it.

Saute the Shrimp: Place a cast-iron skillet or grill-safe pan directly on the charcoal grill and allow it to heat up. Add a small amount of olive oil, then place the shrimp in the hot pan in a single layer and saute briefly, tossing or turning them as needed until they begin to change color and develop a light sear on the surface.

Add the Garlic Butter Sauce: Once the shrimp begin to turn pink, add the prepared garlic BBQ butter to the skillet and toss continuously as the butter melts, allowing every piece of shrimp to become evenly coated with the garlic, chili, onion, lemon, and BBQ seasoning. Continue cooking just until the shrimp are firm and opaque throughout, then remove the skillet from the heat to avoid overcooking.

Rest and Slice the Steaks: Let the grilled steaks rest for at least 3 minutes after removing them from the grill, then carefully remove the TP828BW probe and cut away the kitchen twine. Using a sharp knife, slice the steaks across the grain into even pieces, which helps keep each bite tender and easier to chew.

Plate and Serve: Arrange the sliced charcoal-grilled steak neatly on a serving plate, then spoon the hot garlic butter shrimp alongside it, including a little of the flavorful garlic butter and seasonings remaining in the skillet. Serve immediately while the steak is still warm and juicy and the shrimp are freshly cooked and tender.
